41% organic white chocolate, made with cacao butter from the endemic Piura Blanco variety, from northern Peru. Fresh, with a green note, light caramel, and delicate licorice.
laflor's patience in obtaining this cacao butter has paid off. Farmers from the Norandino cooperative, in the villages of Puerta Pulache and Paimas, cultivate the endemic Piura Blanco variety. They ferment the beans in wooden boxes and dry them under cover in the sun. The cooperative produces the cacao mass in the city of Piura; from there, the company Cacao El Rey in Tarapoto presses the butter. The journey is long, and the aroma reflects it: a fresh green note that intertwines with soft caramel and very fine licorice.

Piura Blanco
A Variety Rescued in Northern Peru
Trees of the native variety Piura Blanco grow in the towns of Puerta Pulache and Paimas, in the Piura region of northern Peru. It was not until 2008 that its cultivation began, driven by Craft Cacao of Original Beans and the Norandino cooperative.
Founded in 2005, the Norandino cooperative brings together more than 7,000 families who grow cacao, coffee, and sugarcane in northern Peru. All Norandino producers are organic and fair trade certified.
In Puerta Pulache, many young farmers have switched from rice or corn to cacao thanks to agroforestry systems.
