About the product
Origin, process, and how to choose what best suits you.
MAANNA is certified as an organic operator by the Organic Agriculture Committee of the Community of Madrid (CAEM) and will always opt for products that have organic certification, are made with organic ingredients, or through sustainable practices.
Every origin has its own profile, and that comes through in the flavour notes and nuances of each product. You'll find chocolates ranging from nutty to more acidic, floral or spiced — depending on the variety and fermentation , just as you'll find coffees that are fruitier and lighter, or denser and more chocolatey.
Chocolate is available in 70g and 30g bars at different percentages, chocolate-coated nuts (dragées) and grated cacao for preparing hot chocolate or a chocolate drink.
Coffee is available whole bean or ground, depending on your brewing method.
We indicate the flavor profile and intensity for each product. For coffee, we also include the recommended brewing method. For chocolate, the cacao percentage guides the intensity.
- Coffee: airtight container, away from air, light, and heat.
- Chocolate: between 15–18 °C (59–64 °F), without sudden temperature changes to avoid alterations in texture and flavor.
Some references may include sugar or traces of allergens. Complete information is detailed in each product sheet.

Everything you need to know about the chocolate we offer at MAANNA
Chocolate comes from the Nahuatl word “Xocolatl,” and it is the word that names what may have been the first beverage made from fermented cacao, consumed by Aztecs and Mayans in Mesoamerican culture. It was prepared with ground cacao beans, water, and spices.
Cacao is a food revered by civilizations with very high antioxidant power. Thanks to its polyphenols, flavonoids, and minerals, it contributes to cardiovascular health, fights oxidative stress, and increases serotonin. Cacao is a powerful source of magnesium, iron, and
zinc.
Each origin expresses a distinct profile: coffees that are fruitier and lighter or denser and more chocolatey; cacaos with notes ranging from nuts to more acidic or spicy profiles, depending on the variety and fermentation.
laflor is our Swiss partner and the sole supplier of the chocolate we sell and serve at MAANNA.
Absolutely all the chocolate we offer for sale - in bars, grated for hot chocolate, or in dragees with nuts - or for consumption on-site or to take away - drinks and creations made by an external workshop - comes from the same factory in Switzerland.
laflor is a bean-to-bar chocolate company based in Zurich that takes its name from the silk industry in Zurich between the 14th and 19th centuries.
The "bean-to-bar" concept refers to a chocolate production model in which the manufacturer controls the entire process, from the acquisition of the cacao beans to the creation of the final bar. Did you know that it takes at least nine months from the moment the cacao is harvested until the chocolate bar is ready to be enjoyed?
laflor sources its cacao directly from small farmers in South America, rather than relying on anonymous trade through the commodities exchange. The cacao beans arrive in Europe by ship, and in the case of cacao from Colombia, it travels by sailing ship, neutralizing CO₂ emissions.
Subsequently, laflor carries out all the important stages in its Zurich factory: roasting, grinding, conching, and tempering.
Laflor ensures that cacao producers cultivate and operate sustainably, even if some of them are still in the process of obtaining organic certification.
We like to emphasize that all our chocolates are completely natural. They do not contain any additives, flavorings, or lecithin, as is the case with many commercial brands. The only ingredients you will find in your chocolate are cacao, organic certified cacao butter, and organic certified sugar. Milk chocolates also contain organic certified whole milk powder from Swiss cows.
The cacao used to make the chocolates we sell comes from five different origins: Brazil, Colombia, Ecuador, Peru, and Venezuela.
Laflor chocolate is vegan, with a few exceptions: Hacienda Limón Ecuador 56% milk chocolate and Hacienda Limón Ecuador 62% milk chocolate with cacao nibs, Piura Blanco Peru 41% white chocolate, the Hacienda Limón Double Orange winter edition, breadcrumb dragees, and Glam Hazelnut dragees.
